Place mozzarella sticks for at least 2 hours in the freezer until frozen.
Put up three little shallow cups. Place flour, salt, and pepper in the first bowl; mix well.
Add 1 egg In the second bowl and beat lightly.
Mix breadcrumbs, Italian seasoning, and garlic powder in the third bowl.
One at a time, cover the bits of mozzarella in the flour mixture, then dip in the beaten egg and eventually cover with the flour mixture, rubbing gently to make the coating stick.
Freeze again for 30 minutes.
RESERVE bread crumbs. In a small shallow bowl, beat the second egg.
